Head Pub/Pilot Brewer

We are looking for a creative individual to lead our small batch team at Trophy Brewing. The candidate should be very organized and work well both autonomously and with a team. The candidate should have an experienced palate and be well versed in the entire spectrum of beer styles, both in terms of knowing their characteristics as well as how to brew a range of styles on a technical level. The individual should have a palpable energy for brewing unusual beers, but also well versed in traditional methods, practices, and metrics for brewing professionals. The candidate should be comfortable with technologies both in the context of communication and documentation. They should be capable of accurately costing out recipes. The individual should be somewhat mechanically inclined and able to resolve unanticipated production challenges with the tools and resources that they have on hand as well as maintain the breweryequipment in ways that will minimize the occurrence of such unexpected challenges. The individual will be expected to manage one employee within the context of running the pilot system. The candidate should be capable and willing to assist in other duties and activities throughout the brewery beyond the pilot system, including but not limited to: assisting on the canning and bottling lines, organizing and picking kegs for distribution, assisting with regular inventory of ingredients and materials on site, keg washing, cleaning, serving at festivals and events, and assisting with primary system operations as needed.

Job Duties will include:

  • Operate our 3 barrel electric brewhouse at a production rate of approximately 400bbl/yr

  • Schedule, supervise and direct one brewing assistant

  • Plan the brewing and fermentation schedules in coordination with the Head Production Brewer

  • Develop recipes and build on challenges to brew with experimental processes and ingredients

  • Advocate for exciting brewing ideas

  • Construct and document brewdays in such a way that it contributes to expanding the knowledge of the entire brewery and integrates well with the documentation procedures of the primary system

  • Source unusual ingredients as needed

  • Assist where needed elsewhere in the production brewery

  • Educate the serving staff and bartenders across the company about new beers as they are released

  • Regularly collaborate, design, and brew collaboration beers with other breweries and organizations

  • Attend and pour at festivals, particularly those that feature beer produced on the pilot system

*Trophy Brewing is looking for hardworking, experienced, and creative line cooks to join our team! Qualified line cook candidates should have experience with food preparation, saute, grill, and assembling high quality dishes according to recipes and specifications. All applicants must possess the ability to adhere to strict health and sanitation procedures and ability to maintain a professional demeanor and appearance. Some culinary education is preferred but not necessary, ServSafe certification is highly desirable. Bakery and/or Pizzeria experience is a plus!
